About Chef Jesus Perez

Chef Jesus’s love for cooking was born in his family’s kitchen, where he first learned to cook by helping his mother prepare meals. That early joy of creating something that brought people happiness inspired a lifelong journey. At just 18, he began his culinary career as a prep cook, and over the past 30 years, he’s honed his craft through hands-on training under a variety of chefs and mentors. Today, with 9 years at Fleming’s under his belt, he leads with humility, consistency, and a deep passion for the Guest and associate experience. Jesus’s culinary philosophy emphasizes quality, freshness, excellence, and balance. He’s proud of every dish he creates—whether it's a seasonal feature or a classic steakhouse staple. Influenced by Chinese cuisine and guided by curiosity and craftsmanship, Jesus thrives on exploring flavors that surprise and delight. His favorite menu item, the USDA Prime Bone-In Ribeye, reflects his love for bold flavor and beautifully marbled cuts. As a leader, he fosters a kitchen built on respect, collaboration, and shared growth—believing in the power of positive energy and team input to create both great food and a strong culture. Outside of the kitchen, Jesus finds joy in spending time with his family. Through the Chef’s Signature Series, Chef Jesus continues to serve Guests with passion, humility, and a commitment to excellence that spans every plate and every service.
